SWEET POTATO PIZZA
makes one 10 inch pizza
1 cup mashed sweet potato
1 cup oat flour*
1 teaspoon baking soda
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon curry powder (optional)
Warm up your oven to 400 degrees and grab a large baking sheet and line that shit with some parchment.
In a large bowl mix up the sweet potato, oat flour, baking soda, oregano, basil, salt, pepper, and curry powder. Kinda kneed it with your hands until everything is blended and a you can form a sticky ball of dough. Cover a cutting board with a little flour and roll or press your dough into a 10 inch wide circle, about ½ inch thick. Ya know, like a fuckin pizza shape.
Throw that on your baking sheet and bake for about 15-20 minutes or until the edges start to look a lil brown. Then pull the crust out, top with whatever you're using and throw it back under the broiler for up to 5 minutes to get the toppings all warmed up and a kinda roasted. * just throw a mounded cup of rolled oats in a blender or food processor and run that shit till you got flour. Easy.
