Recipe from Kathryn Budig's Aim TrueListen to her convo w/ us HERE

Ingredients
1 cup unsweetened almond milk
3/4 cup nooch*
1 tablespoon olive oil or nondairy butter
1 ½ cups diced onion, spring or white
1 28 oz can crushed tomatoes
1 cup carrot juice
2 tablespoons tomato paste
1 lb dry pasta (os or wagon wheels are best, obvs)
Salt
1 teaspoon garlic powder
juice from half a lemon (about 1 tablespoon)
Directions

Blend together the almond milk and nooch so that there aren't any clumps then set that shit aside. In a medium pot, warm up the oil over a medium heat and saute the onions for about 5 minutes. Add the tomatoes, carrot juice, and tomato paste and stir it all up. Simmer for 5 more minutes, stirring as needed. Add the almond milk mix, a pinch of salt, garlic powder, and lemon juice and then keep that motherfucker simmering for another 5-10 minutes to thicken up. Taste and more salt as needed.

When you're ready to eat, cook the noodles according to the package directions and then stir that shit into the pot of sauce. Serve right away. Wanna make it extra adulty? Stir in some wilted spinach and fresh basil or parsley.

*Nooch is nutritional yeast basically vegan cheesy pixie dust. You can get it near the spices or in the bulk bins at the grocery store. Can't find it? Get it online.

Every holiday season someone brings a dry ass veggie platter with ranch to an office party. Sad. But you'd never bring that to a party.
