ONE POT PASTA PRIMAVERA

Every summer we all got that one friend, prob named Chad, who tosses a handful of raw veggies on the grill and then cracks wise about being a grill master. That's fucking lazy and nobody wants to eat that shit. Cook up our pasta primavera and knock Chad off his pedestal. 

ONE POT PASTA PRIMAVERA

enough for 4 people

 

3 tablespoons olive oil

1 white onion, sliced

2 cups sliced cherry tomatoes

1 cup fresh corn

3 cloves garlic, sliced

1/2 teaspoon salt

dash of red pepper flakes

12 oz uncooked spaghetti

5 cups veggie broth or water

1 tablespoon balsamic vinegar

½ cup chopped basil

Salt and pepper to taste

 

In a large, deep skillet warm up the olive oil over a medium high heat. Throw in the onion and saute it around for about 3 minutes. Add the tomatoes, corn, garlic, salt, and red-pepper flakes and let that shit cook together for about a minute.  Split all the ingredients in the pan right down the middle, add the pasta and then pour in the broth and vinegar. Bring to a boil over medium high heat, stirring and turning pasta frequently with tongs or a big fat spoon. Make sure everything is mixed up and that the pasta isn’t sticking to the bottom of the pan. At first it's gonna look like a shitload of broth but between the starches coming out of the pasta and corn and how much is gonna evaporate and absorb you’re good to go. Trust the damn system. Keep cooking until pasta is done and water has nearly evaporated, about 9-11 minutes. Stir in the basil and add salt and pepper to taste. Serve right away or at room temp.
