makes 8 pops depending on the size of your molds
2 large ripe mangos, peeled and chopped
1 lime, zest and juice
2 tablespoons chia seeds, white or black
1 cup vanilla yogurt (coconut yogurt is perfect)
Throw the mango, lime zest and juice in a food processor or good blender and run that shit until it’s smooth. Stir in the chia seeds. Spoon two tablespoons for the mango puree into each popsicle molds. Then layer in two tablespoons of the yogurt and then top that off with more mango puree. Basically just create some pretty layers, easy shit. Add a wooden stick to each mold and transfer to the freezer to set overnight. Then you know, eat them and appreciate the simplicity.
