saute one large onion and 3-4 cloves garlic over medium heat. once translucent, add 6 oz tomato paste, 1/2 cup dry red lentils, 3 tbsp garam masala, 1 tbsp turmeric, and a large peeled/cubed butternut squash. top with enough water (or veggie broth) to cover by about an inch. add salt, pepper, and chili powder to taste. bring mixture to a boil, to marry all your flavors, and allow to simmer over low-med heat for about an hour (adding water as needed.) finally, blend everything together until smooth in a blender or food processor and serve hot. top with roasted veggies and rice for a hearty meal.
