2 cups green lentils 4 cups water 1 cup veggie broth (Have extra to add later to the gravy if you want that shit thinner) 1 cup soy milk 1 tbsp olive oil 2-3 shallots sliced 3 cloves garlic sliced 1 tbsp oregano 1 tbsp sage 1 tsp crushed red pepper flakes (optional) 1 tbsp soy sauce 1 tbsp vinegar Salt and pepper to taste Rinse the ick off your lentils and throw them in a pot with the 4 cups water and 1 cup veggie broth. Bring to a boil, then turn them bitches down to a healthy simmer with a lid on. Stir occasionally until the lentils are cooked. Test that by squishing one between your fingers (after its cooled off duh). That should take about 30 minutes. While the lentils are cooking, heat the olive oil then add the shallots and garlic. When that starts to brown, add your herbs and toss them all together in the pan for about 3 minutes. Drain your cooked lentils, put them and the shit you just sautéed into a blender. Now add the soy sauce and vinegar and begin to blend. You will surely have to stop and stir things up with a spatula. The first time you do this, add the soy milk to make that shit creamy. And if you don't.... Well you know... Fucking don't. Thin this out to the consistency you like, and spread that on some fucking toasted bread or biscuits. It will keep a lot longer in the fridge and freeze well also.
