This is so easy and looks way more impressive than it actually is.
1 Tbsp. Grapeseed oil
1 Handful shredded cheese*
1 Handful Capers
1 Handful sliced cherry tomatoes
1 Handful minced green peppers**
1 Heart of palm (sliced)
1 clementine (sliced)***
Put the oil in a skillet on medium heat. Crack the 3 eggs and begin to scramble in the pan. I find that this works better for the consistency I like than cracking the eggs in a bowl and mixing them together. Add the ingredients and keep scrambling until desired consistency. Garnish the plate if desired.
*Any cheese will do
**sub olives, onion, whatever you like
***Garnish with anything or don't garnish at all
Serves 1 to 2 people (depending on your appetite)
